Before I go online with PSU on the xbox360, I was just wondering, I live in england, Can I play with my friends in America and the like? Or am I stuck with only European gamers.

You sir are correct. You can play with anyone from the US, Europe, and Japan. Although most of Japan's population stays to Uni 16 for good reason.
