You'll want to start with some sort of a TV tuner card for your PC, DeMonicArua. Consider one of ATI's All-In-Wonder video cards. Otherwise, Google can find you some alternatives. That'll allow you to capture video from the Xbox 360. From there, you'll need some sort of video editing software. Windows Movie Maker (which comes with Windows XP) might be enough for your purposes.
