Any more expansions planned?

I am pretty new to PSU, and have by no means sampled even a tenth of what is on offer in the game, but I noticed that a lot of things in the newer PS:P version of the game, namely PSO retro weapons like DComet and the Lavis range are absent from PSU.

Are these likely to appear via updates or a possible expansion?

Oh, the JP servers have already gotten updates for the PS:P content? Thats awesome to know =)

The servers used for Xbox 360, are they mixed in with other users like PC or ps2 players, or are we all seperate, do you know?

No, Xbox 360 servers are seperate from PC/PS2.
