How are subclass stats calculated in regards to the level of your main class?

You always get 20% of the stats from your subclass. However, there's a bit of a catch.

If your Main Class Level >= your Sub Class Level, you will receive 20% of the stats from your subclass at whatever level it's at. So if you were a Lv30 Hunter with a Lv20 Fighter subclass, you would get 20% of your Lv20 Fighter's stats.

Alternatively, if your Main Class Level < your Sub Class Level, your Sub Class Level will scale itself to match your Main Class Level in regards to stats. So if you were a Lv20 Fighter with a Lv30 Hunter subclass, you would get 20% of your Hunter's stats as if it were Lv20 as well. Skill points are unaffected.

Additionally, you will receive the full effect of any stat-up skills that your subclass has. However, be aware that stats gained from stat-up skills or mags are not reflected when choosing a main class or a subclass from the type counter, so you might gain more in certain stats than it says you will.
