Is it possible to do these with another player and just bring along the 1 required NPC? (so 3 people in the party)

Yes, you can bring players, but not other NPCs. Also, next time use quick questions thread that is stickied, please.

If you are not too comfortable with bring others along >from start.

You can always make the party by yourself, then bring the require NPC.
Once you did that.
Ask your friend to join your party at the counter.

Just don't hop down to the field before your friends joined.
As soon as your friends are in your party.
You are ready to go.
