I actually like all the boss themes to some degree, but the field themes are more of a mixed bag. Like many, I prefer the atmospheric PSO1 field themes to most of what we've got in PSO2. Fortunately, the boss themes tend to make up for the slack more often than not (now if only they played when they showed up in the fields...).

It's pretty relative as I really love the PSO2 music, in fact as much as those from PSO1, and I can't pick a specific one. But there are some exceptions like Dark Ragne and Miniboss I don't like.

It's actually pretty rare that I listen to the actual in-game music. Must be a habit I picked up from WoW. Hell, I listened to the PSU music back then more than I listen to the PSO2 music now.
