I have one final objective on my card to complete, which is to talk to Astarte.

HOWEVER...

I have no simple "Talk" option, and the other options available do not seem to trigger anything that counts toward this objective.

What do I do?

You have to clear "Basic Knowledge" from her, it's like some sort of quiz.
For the cheating sheet, look it up on cirnopedia under arks road tab.

I don't really know if you supposed to clear all the quiz or only the very first one, but since you already have cheating sheet maybe you could just clear all of it, you will also rewarded with accessory ticket upon completion.
