I know there was confirmation on the PS2 and PC versions servers being connected, but has there been anything said about the servers connecting to EU/JP servers (Obviously from the US versions)?

There have been no confirmations yet. You should probably expect that they will be seperate.

Why should we expect that? Except for the Xbox version, all of the PSO's have been connected with other countries.

You are misinformed then. The US/EU Blue Burst servers are seperate from the JP servers. The Chinese BB servers are seperated from all of them.
