Well with the current lack of a GC keyboard for the US, has anyone tried the USB Keyboard + ps2 to USB link, than the GC to PS2 link?

It won't work. Barubary already stated that the PS2->GC converter can only read a dual shock controller, and not a keyboard

Yeah, I dropped the idea because of what Barubary said. It was really more hopeful than anything else.
