Just a passing thought, but how exactly do stat increases happen upon level up?

Are stats pre-determined through class? or are they something else?

I figure, although choosing what stat you want to raise can add to higher customization, it also tips the games balance a bit.

Your stats depend on race, sex, and current class.

I'll try to answer in more detail. You have two levels: Your character level, and your class level. Character level ups give you stats dependant upon your race and sex. Your class level will give you stats that are relevent to your class (Hunters will get lots of ATP for example).

Err no, character level ups are still based off your current class. The stats aren't permanent though, they will change if you switch jobs. Job level ups seem to be set increases regardless of your race/gender though

No, sex. Gender is something nouns have; sex is something animals have.
