You will only need to purchase a guardian licence to play PSU online once the full retail version is released.

Getting started is extremely easy! If you want to participate you must have an active Xbox Live Gold account. The Beta will be available for download on the Xbox Marketplace between October 11th and October 12th.

It makes no mention of needing a Guardian's License when it talks about the Xbox Live demo. I find it unlikely they'd leave out such an important piece of information, so signs point to no, you don't need a Guardian's License for the demo. It wouldn't even make sense to require essentially paying the subscription to be able to participate in the demo. Not to mention, you can't get a Guardian's License yet anyway.

You should be able to create a account for free and get gold for 4weeks of something. This is something i just heard, not sure if it's true.

A new LIVE account made on your X360 will be a Gold trial account for 30 days.

You can do it that way.
