Can the rooms be remodeled offline? Either extra mode or story mode? Just wondering.

I'm pretty sure you can remodel in extra mode.

Hopefully. It would suck to have a bland room since i wont go online for a while now.

I never found out how to, nor found out how to rename the PM in extra mode. If you find out though, cool beans! Me, I just went online instead, easier.

You'll note when you get online that the online rooms are way bigger than the scrappy room the hero of the story (and thus by extension extra mode) gets. Offline you only have the three slots, online there's I believe 11 slots, and you can extend your room further with a shop.
