i was wondering if i bought the Pc version of PSU could i use my Guardians Licence for that one as well as my 360?

No. Servers are seperate. Your guardian's license for 360 is linked to your gamertag and doesn't actually have the login name and password of the PC/PS2 versions, per se.

Nope. The 360 is on a different account, which is Gamertag linked. If you get the one on PC, that's what you're on.
