Like you know, how you need level 5 Ranger and Force level 3 to be a Guntecher. If you make instead make them both 10/10, will it affect the stats of Guntecher in any way?

No. You'll still be a *whatever level* of that special class. What WILL be affected, though, is a lot of the other stuff you did to gain those Levels in the old classes.

For instance, if you already had 10 levels of a technique, Photon Arts, or Bullets; you'll keep them going into a class like Guntecher.

If you had 20 Bullets (top for the Ranger range) for any certain type, You'll notice that a Guntecher can now gain XP in them again, to bring them up to a 30 max.

If you already maxed a Technique past 10, the GunTecher will limit it down to 10, only while you are of that class.

Your character level has more to do with how your initial stats fall as you make the switch (as long as you can make the switch). Then it's all up to levelling that specific class, which has it's bonuses based on itself throughout the levels.
