Personalities can be changed by going to the rarity upgrade menu. Pets of the same or superior rarity can be used, you choose the personality between the pet/egg available.

In the precede mining thread, pet-affixes have been found (ie : affix on your weapon that affect the instead, is what I got from it).

SU being t-atk based means you'll invest mostly in t-atk...

I wouldn't worry about leveling SU, as so far, it's strongly leaning towards being a tech-based class who can cast techs, so if you have all class rod or wand or talis (or even, dare we, jet boots)...
