easy+normal choice option has been a thing since episode 5, far as I know you dont get the titles for doing it on easy (even though story mode itself is literally easy)

I was near certain that Omnibus in EP5 did not have Easy-Normal mode for quests from EP1 till EP4... Maybe it's an EP6 change?
Where did the shops for 2018 and early weapon badges go?
Since we got so many SP badge shops now, can you convert them? how?
They're at the Badge Shop assistant, right next to the Recycle shop in the Shop Area. Select Weapon Badges (it should be the 3rd category in the list if I remember correctly), and you will get the list with all Weapon Badges. For each year except 2019, the last option allows you to convert Weapon Badges of that year to Weapon Badges SP.
No higher difficulties for story?

Normal scales upwards, easy sets everything to level 30 or below.

You should look at the date of the video first.
That's a video of the original (now defunct) version of the quest, where each individual story quest was a single difficulty and had its own enemy level cap scaling; this particular quest had a cap at lv60. The current version now has the enemies cap at lv75 on Normal, and while everything melts if you decided to play it after hitting 90/90, if you get around to it while you are still leveling, it will feel like the correct difficulty for a story mission (ie. one that is meant for the sake of lore, not for a challenge).
