I currently have a GH 414 100 Striking Mag.
If I change it to a GH 470 Series. Would my chance to synth Striking Weapons go down or stay the same?

Same. Synth stats do not change.

Just to verify, because it's going from a Synthesis Trend: Striking to None. Will It not effect my chances of making a Double Agito i.e.

All that that means is that, the model was created because it was good at making striking weapons. It's still good at making striking weapons, but it isn't the same model anymore.
