When shopping for armor I'd like to know which stat would benefit an up close and personal Fighgunner: Def or Eva???

What's the major difference between the two?

I think Def might be better, you don´t wan´t to get interupted up and personal with high evade.

Long-distance is better with high evasion, seeing as you rarely (supposed) to get hit.
There, interuption is not much of a bother.

Defense reduces damage from physical attacks, Evasion makes you block more. Most melee fighters prefer Defense since high Evasion makes your PA combos get interrupted more often. You'll take more hits but at least your PAs won't get blocked half-way through.

The only time Evasion > Defense (for melee types) is if you use Just Counter a lot.
