how do you transfer your character from the demo to the full game

All I did was hit continue. :o
The game should have picked up from the demo.
You do mean PS:P2, right?

Then you should be able to just hit "continue" and it would work.
Unless you forgot to save in the demo or something.

when I hit continue it keeps pooping up with an error message help and yes I do have a save file on the demo

You shouldn't just hit continue.

Choose IMPORT, then choose the second option 「ＴＲＩＡＬ ＳＡＶＥＤＡＴＡ　ＩＭＰＯＲＴ」, you should see your PSP2 trial characters.
