How do you unseal them? Do you just meet the kill count? Or do you need to "use" them, or something?

The Dendou Blade gets unsealed with 2011 kills.

The wiki says killing 2011 enemies with it boosts the stats by 50%.

So, what other weapons are there that need to be unsealed? I know Sealed J-Sword probably does, but what about Lame D'Argent, or whatever it's called in this one?

I haven't gotten one, but it'd still be nice to know, because there's a twin saber you can get that has Lame, and Excal o-o

Lame D'Argent is now known as Lambdacalibre, and both of them are just sabers, and no you don't need to unseal it to make it into an Excalibre. The twin saber variant is Lamda Excalibur.

What's the best level for unsealing weapons? o-o Hopefully in solo mode.

Something with tons of enemies and weak enough to not worry about getting 0HKO. Personally, I just do random C missions until it's unsealed.

The Sealed J-Sword has, ironically, not been found to be unsealable. :/
On another note, since the +50% unsealing bonus for Dendou Blade (biggest such bonus in the game) stacks with extend bonuses, the weapon is incredibly overpowered.

And it's a terrible shame. A 15 star sword like that shouldn't have the ATP of a 10 star one.

Additionally, there are the Kenei twin sabers to unseal. It takes 1500 more kills than the Hozuki though.

Is it definitely confirmed that SJS isn't unsealable? Shame if it isn't, may as well throw it in stash and use something with some ATP

It probably just has some ridiculous and arbitrary kill count to unseal it. Like the original.
Reading on the Japanese wiki, people tried that, to no avail so far.
But yeah, they'd better have thought something out for it, or this game can't be considered complete!
