how do you access the quick menu with the controller to switch weapons

Depends on how you have your controller set up. I tried to mirror mine as closely to the Gamecube version as I could, so for me it's RB (right bumper) + Y (yellow button). If you look in the set up for the controller it will be a combination of the ACTION PALETTE TOP button the and the NEXT PAGE / ACTION PALETTE CHANGE button. So whatever buttons you have set for those two things, you will press them together to bring up the quick menu. Hope that made sense :)

I generally press the NEXT PAGE / ACTION PALETTE CHANGE button (RB for me) slightly before the ACTION PALETTE TOP so that the chat menu doesn't come up. Also to switch between the quick menu palettes, press the NEXT PAGE / ACTION PALETTE CHANGE once the quick menu is open. That will switch between the Weapons, Items and Tech menus (which you probably already knew :) )
