I know its a really stupid question... but in Ultimate, wouldn't The Fake In Yellow Quest be called The Fake In White since El Rappies are White? Or do they just put really insane Rag Rappies in instead?

nope. it is still called fake in yellow, and el rappies are used.

What's even better is Ult Forest of Sorrow. The baby Hildebears are still Hildebears. They were too lazy to change anything. XD
