If you play online and you finish lets say stage 1 of C-mode and quit. The next time will you be in the level that would be after that? I'm so confused on that!

For ease of talking and understanding, think of each individual Challenge Mode stage as a quest. Once you pass the stage you are sent out of the game, basically like in quests.

Beating a stage "unlocks" the next stage to be played by that character. You can change teams, do them a different time, log out, whatever. It saves your challenge mode times and the stages you have completed on your character, so it will always be there.

So, to answer your question, yes, you can quit the game and still have the stages you completed saved. You don't have to do them all in one sitting.

... as addition you can also play both ep1 and 2 Cmode stages without completely having cleared one.
Each progress on each ep is carefully saved and can be checked in your online status any time.
