View Full Version : Subby's uber soup receipe!

Since people have been asking about it, here is the receipe for all who might enjoy some soup cooking!



Subby's uber tomato-coconut milk Soup

Ingredients

1 tbsp grated ginger

1 cup chopped carrot

1 Cup chopped celery

1/4 cup chopped fresh basil leaves

2 cups vegetable stock

1 can (48 oz., more or less) low sodium tomato juice

3-4 tbsps soy sauce

1 cup bean sprouts

1/2 cup coconut milk

2 tbsps lime juice

1 tsp hot garlic chilli paste

Method
Cook the ginger, carrots, celery, and basil in the stock in a medium stockpot for 10 minutes.

Add the tomato juice, soy sauce, chilli paste, and bean sprouts and cook another 10 minutes.

Add the coconut milk and lime juice and serve.

Makes 6-8 servings.

If I happened to have all of those ingredients/time, I would definitely try it.

But what is a college student going to do with all the leftover stuff?

Sancocho (Vegetable soup Puerto Rican style and my personal favorite http://www.pso-world.com/psoworld/images/phpbb/icons/smiles/icon_biggrin.gif !!)
INGREDIENTS:

2 pounds short ribs of beef

1/4 pound smoked ham, diced

4 quarts chicken stock or water

1/2 cup basic Recaito (Sorry, I don't know the name of the herb in English http://www.pso-world.com/psoworld/images/phpbb/icons/smiles/anime2.gif )

1 cup tomato sauce

1 pound of pumpkin peeled and diced in 1-inch cubes

1 pound of yautia (taro root) peeled and diced in 1-inch cubes

1 pound of yam peeled and diced in 1-inch cubes

1 pound of cassava peeled and diced in 1-inch cubes

2 medium green plantains, peeled and cut in 2-inch pieces

3 ears fresh corn, cut into 1-inch pieces

1 tablespoon salt

1 tablespoon black pepper

1 quart water

METHOD:

1) In a big soup pot, combine the first 9 ingredients. Cover and bring to a boil. Reduce the heat to medium, cover, and simmer for 30 minutes.

2) Add the remaining ingredients and bring to another boil. Lower the heat and simmer, covered, for 45 minutes, or until the vegetables are cooked. Adjust the seasonings to taste and you are done http://www.pso-world.com/psoworld/images/phpbb/icons/smiles/anime1.gif. Yields 10 to 12 servings.

Plantain soup (My staple food when cash runs low http://www.pso-world.com/psoworld/images/phpbb/icons/smiles/anime2.gif )

INGREDIENTS:

1 large green plantain, peeled and shredded through the next-to-finest side of the grater

10 cups chicken stock

1/2 tablespoon salt

1/2 tablespoon black pepper

1 cup bok choy leaves cut in very thin strips

METHOD:

1) Form dumplings from 1/2 tablespoonfuls of shredded plantain and set aside. Bring the chicken broth to a boil in a large pot. Add the salt, pepper, and dumplings. Reduce the heat to medium-low and cook for 15 minutes. Add the bok choy and cook for another 5 minutes. Yields 6 to 8 servings.

You can also add three green bananas,peeled and shredded through the next-to-finest side of the grater, form them into dumplings and add these at the same time as the green plantains.

I been hunting for ginger, and for some reason I can't find them anywhere? I wonder what would that do to the soup.

I tried to make it. But it's hard, they don't have some things here, they use different terms here than the english ounces, and I didn't like ginger or cocos. -.-;

And I screwed up some things in as well as the proportions of everything, as the time.

So in the end I guess it only would have tasted vaguely similar to the original recipe.

Tasted good nonetheless! ^ ^;

It really, truly doesn't taste like a whole lot - but that's OK because you have access to a stove, right? Good, thought so...


Butter Fried Tofu Teriyaki
from "The Book of Tofu"
Serves 4

12 oz firm tofu cut into cubes
1/3 cup Teriyaki Sauce
1 and 1/2 tablespoons butter

Place sauce and tofu in a shallow pan. Marinate for 1 hour, turning tofu after 30 minutes. Melt the butter in a skillet. Add tofu and fry for 2 to 3 minutes on each side until golden brown. Serve any remaining marinade as a dipping sauce.

Remarakably simple and very tasty. A little prep time, but it's worth it especially when it's served with some sort of beef or shrimp.

tofu tastes like solid nothing. It absorbs flavor from whatever you cook it in, so it will taste like the rest of the dish.

Hm... I have no idea.

But remember to use Soft Tofu for soups! Don't want none of that firm stuff floating in there... ew....

$3.69 sounds about right - or atleast, that's about how much they sell it for at the stores down here... I tried Aredhel's tofu recipe, It was the first time I ate tofu, to be quite honest the recipe left me desiring a little more punch in it. Don't get me wrong, it tasted pretty good http://www.pso-world.com/psoworld/images/phpbb/icons/smiles/icon_smile.gif but I found the flavor to be quite bland for my tastebuds http://www.pso-world.com/psoworld/images/phpbb/icons/smiles/anime2.gif.
