I know this is stupid, but can v2 play offline?

Everyone I ask at the stores says you can't. Is this true? I want to see what i'm missing in v2. should I stick to v1?

You're not missing much. The main draws of v2 (at least to me) battle and challenge mode can only be played online

It is a draw. A big one. And, unless your already level 100, it'll be a while before you find v2 rares, but that's IF your only going offline.
