Hours of Wealth from the album Ghost Reveries is a good start.

Smashing Pumpkins got really mellow at some point. I'm not entirely familiar with them, but I do have Mellon Collie and the Infinite Sadness, I'd suggest checking that out, it's a 2 disc album.

Um, I don't know if this works, but Air's album "Moon Safari" is really relaxing. Air's "Talkie Walkie" is good too, but it's less ambient. I also second Hrigg's suggestions of Dark Side of the Moon, Animals, and Wish You Were Here.

Actually quite surprised nobody mentioned Brian Eno. He's like, epitome of ambience. Depending on your definition of ambient though, I can suggect anywhere from sigur ros to explosions in the sky, and a lot more in between. Massive Attack, Silver Mt. Zion, Royksopp, and the album leaf are good choices. Oh, and who can forget Zero 7?

I think this fits in your want: Stranger In This Town by Richie Sambora. Incredibly album and is very underappreciated. Samples (at least the ones I've heard) don't do the songs justice either. Really a shame you can't hear at look a good chunk of them to gadge if you like them.

Hide and Seek by Imogen Heap, anything by Iron and wine is easy listening, but if you were really hardcore you would listen to Gregorian Chant (EX: Hildegard Von Bingen) Hells yeah.
