topic is wayy too vague.
but otherwise..
If you can manage to classify r&b under hip hop, and now a subcategory of jazz, your loss. Same for Pop and Techno. You're lacking Electronica altogether.

Hip-Hop - Gym Class Heroes - Papercut
R&B - Craig David - Do You Believe in Love?
Pop/Electronic - Tie between TV On the Radio's Staring at the Sun, and Imogen Heap's The Walk.
Gigi D'Agostino's L'Amour Toujours, and The Postal Service's Such Great Heights are also classics in this genre.

Rock:
Alternative: Bloc Party - The Pioneers. By far. Lyrical depth, and instrumental variety. Screamo: Saosin's Seven Years was a pretty damned good song.
Acoustic: John Mayer - Waiting on the World to Change
Metal - Breaking Benjamin - Firefly
Country: Trisha Yearwood - Georgia Rain (might be considered pop?)
Jazz: John Coltrane - Blue Train

Other:
Modest Moust & 764-Hero - Whenever You See Fit (This is just a bloody awesome song. It's like the PSO of music; simple but addictive)
Cloud Cult - Chandeliers
Something Corporate - Konstantine (Might be acoustic rock, but more other, due to strong lyrical basis)
Regina Spektor - Bobbin' for Apples ("Somebody next door is fuckin' to one of my songs!" <3)

Second-favourite genre? Do sub-genres count? If not, I'll go with IDM.

Favourite song within that genre? Today it's Netlon Sentinel off of Autechre's EP7.

I'll give it a go, even though I find genres more than impossible to pin down. ;>

Pop: Billy Joel- We Didn't Start the Fire
Rap: MC Lars - Six Degrees of Kurt Cobain
Rock: Not even gonna try, 'cause there's so many.
Classic Rock: Queen - Bohemian Rhapsody (An obvious choice, I know, but I had such a helluva time choosing I just went with an easy one.)
Progressive Rock (I kinda don't get this subgenre, but it's a good excuse for some Pink Floyd): Pink Floyd - Another Brick in the Wall (Part II)
Metal: Not gonna try here, either, because I'll have a dozen metalheads on my ass if my selection isn't "metal enough". ;p
Reggae: UB40 - Red Red Wine (fun fact: Astuarlen's favorite band when she was ~5/6 years old was Bob Marley & the Wailers)
Instrumental/"Classical" - Rolf Rudin - Traum des Oenghus
New Age: Cusco - Flying Condor
Alternative: Barenaked Ladies - Light Up My Room
Electronic: Fischerspooner - Just Let Go
Video Game Soundtrack: Ben Houge - Tulla
Mashup: FuTuRo - My Grapevine Life (Marvin Gaye vs Talk Talk)
Completely awesome (so leaving them out would land you in the 11th layer of Hell) yet uncategorizable:
Oysterhead - Mr. Oysterhead
Dispatch - Open Up

PS Dizzy, I thought "Cocaine" was a (damn fine) Clapton song. Maybe I'm wrong. ;o
