What exactly does character level do besides prove how good you are at card battles... to me it seems kind of pointless since you no longer have any stats...

It does precious little. Your chances of acquiring better rated cards increase with a higher Clv, though.

There's online Clv, and offline Clv. And any value Clv anyone attaches to it, is independat to the differences of online vs offline.
So if you deem it worthless offline, it will be the same online.
Personally I'd say the difference between the cards you get between Clv 1 to 30, to what you get from, say, Clv 40 and up, is significant. After around Clv 40 I wouldn't say level grinding is still worth it, unless you really are after some of the rarer cards.
