Now see, that all depends on a variety of factors, such as:

-format (bone-in "whole" ham is entirely different from deli-sliced ham; turkey, likewise, comes in different formats, from proprietary to open-source)
-preparation (arguably a subset of format, this includes such distinctions as honey-cured vs hickory-smoked ham, etc)
-presentation (this covers modifications that occur after cooking but before consumption and typically involve combining the ham or turkey with other ingredients, e.g. a turkey sandwich with swiss cheese and mustard on tomato-focaccia vs turkey wraps made with lettuce and pesto spread)
-texture and consistency (tough, tender, slippery, dry, etc)

Not a comprehensive list by any means, but I think it speaks to the complexity of the question.
