Unlock SH & XH first since it'll unlock few more client orders and accessible map.
For switching class just whatever suits you better, do you want both class stay on the same level/close enough to calm your inner mind or you just don't care about it and prioritize on reaching the end-game content instead, but while leveling main class you can just do few CO/DO and then switch to subclass and let that class receive the EXP reward instead.

Personally, i'll just suggest you to level both class by switching every 5 level (but it's just me since my autism can't handle more than that), this can also prevent your subclass from gets left behind.

Make sure to level your subclass enough to do both client orders that give +5 SP
then you can focus on your main class

Personally I would get one class to 70 so you can run XH on quest that matter. Usually when I am leveling fresh classes I level one to SH/SHAQ level. At this point I keep leveling the same class but I start feeding all COs to my subclass. I usually do this until I am finally done leveling one of the classes. So 75 or 75 + Class Cube COs.

Err, so I derped alot, when I maxed to 60 ele my Xie jetboots, I forgot to use the Light element changer, so I need another 13* or can I use the light can on my jetboots, even if I have no fodder ?
