Basically, you'll be missing out on the Auction cards. And therefore missing out on the E rank cards from completing sets, and the almighty Del Rappy for getting all the cards.

Well, it *may* be possible. I haven't been able to confirm for or otherwise, but a card transformation has a chance of getting an S or SS rank card, so it may be possible to get the Auction cards from card transforms. I haven't met anyone that's gotten one from a transformation to prove that, but then, there aren't many people that have gotten an S or SS from a transformation to begin with.

U can still do that on multiplayer offline.

You can't have OFFICIAL tourney's offline, but you can most CERTAINLY do your own at home. ^_^

ask Robo47, as far as i can tell he has all cards, and is offline on ep3 as well. and when i say all cards, i mean E cards as well. his main char is over level 900, so i think that is the reason, because the high level causes other cards to evolve into others which are normally found in auction. it would be pretty harsh for ST not to let you get all cards, purely for being offline.
