I agree, Su isn't all about maron. It's just that Maron outshines all the other pets when it comes to alot of situations, but still then other pets still do alot of damage when used correctly.

Just like how tessen spam does good damage on boss but some still complain Br who does not use bow. The general (JP) response to new pets has been "isn't maron better in terms of damage?" since viola.
I hope the next pet evolution would improve pets' performance in their specialized area, instead of fixing what they are not good at. We don't really to have too many all-purpose pets.
But according to road map, sega is not planing to make any evolved pets for a while......

BTW I love how sega decided to skip *13 melon collection and jump straight to viola/synchro. Pretend a problem does not exist is what you do best.

I honestly don't know what to do for Redran, I have Daredevil and Lux, 2 2 layer pancakes (too poor for 3 layer), a support roll, and a sandwich. Should I do substitute roll, 2nd support roll?, cookies, candy sticks? I just don't know.

If I did go Su/Gu, do I need the Gun Striking skill and a R-atk based Mag and armor set? I really dont wanna go and buy a mag just for Gunner sub if its not necessary.

Only if you're bothering to take the r-atk up skills on the Gu tree. And even then it's just a small boost, nothing essential.

Sounds good. I only have a 200 T-atk mag and don't want to bother with grinding another one from scratch. The chain skills, attack pp skill and perfect keeper are the only skills really essential right?

Yeah, unless you plan on doing Gu/Su (which has uses I guess).
