I liked the Grey/Silver/White ( it looked more white to me but I checked again and I do see the grey now ) background because it makes the whole site in general look cleaner and brighter. It makes the text really stand out and it also works as a really good background to set pictures against. I really liked that particular shade of blue, it worked really well as a contrast to the white background.
Right now I am using the Sky Blue (Beta) skin for the forums and while it is similar to what I had before it is not the same.

I'm using the green as well, I don't particularly care for it, but it'll do until we get a larger selection.
I think I had the red and black colored theme....still tryin to get adjusted to the new forums =P

Anyway, I don't have a problem with it. A bit generic, but functional.

- What colors, if any, would you change or add to that theme?

None. It was perfect the way it was.
Simple, understated. Enough differentiation in the background colours to easily seperate lines in topic lists, but both still worked well with the white text - Very dark grey background with white text. It was easy to read for me and sigs/avatars looked good against it.
Lack of gradients, etc. No busy patterns, no glaring, no text almost the same colour as the background.
As for things I'd like to see, either a return of the banners or making all the themes generic. I am not a PSU player and I do not want to see a bunch of PSU characters at the top of my screen. Making them permanently there just goes with my old complaint of feeling like PSO stuff is being forced out in favour of PSU.
(Basically the more it looks like PSOW used to, the better. XP)
Some of the color contrast choices in the themes are ergonomic nightmares
BlueBlack. The only suggestion I would have is to watch the color combinations. A darker background with darker text can cause eyestrain and vision fatigue.

Medium grey text on medium dark grey text is not legible.
Coping mechanisms I've tried include changing the colour windows uses for highlighted text and highlighting everything on the page, and using the high contrast setting on my browser.
Neither is very effective, highlighting is a pain in the ass and setting high contrast sets it for ALL pages.
