Is it just me, or is she incredibly easy? I just beat her on Normal, and she didn't even hit me once.

If you can get to her and cause her to flinch before she casts anything, yes.

It depends on what you use, but I've found her pretty easy to defeat every time.

I'd definitely say Force Mother is the easiest of the 3. Mainly because she stays still. Shot Mother moves very quickly and Blade Mother comes after you.
