Is it possible to use the pose action commands in missions? I swear there was an instant I was able to once but can't figure it out.

Depends. Do you mean the "Team Pose" ones, or any posing actions? Hold X to open the palette, and select the -- to unequip a weapon. Then press Square to bring up a list of actions. Only 2 pages of actions are available in missions, though.
