It was with the DC version. I don't think you can do it anymore. There is a spot in Ruins where you can walk past a big rock though.
There is a xbox code to walk through locked doors.

If they wiggled aroud alot and used kept doing the attack animation with a double saber or bare handed then it was just a glitch that worked on the DC.
If they just walked through as if the door wasn't there, then it was just some sort of hack.
This is trick is a real borderline glitch exploit so I'd recommend not posting it here and asking for it. I don't even think it's in the GC and Xbox versions and just as a reminder, please don't post any other cheat codes or ask for them, as it is against the rules. Any user who posts a cheat code will be banned on the spot. Keep it clean people ^-^

I would probably walk through "licked" doors depending on who licked them. If it was someone ick then I'd try to stear clear of them.
Are you sure it wasn't video from challenge mode? I think in Challenge mode there are a few doors that look locked but you can walk straight through them.
