Crayfish but crawfish would not sound odd to me. Mudbugs, on the other hand, do not strike me as terribly edible.

Crayfish- it's how we were taught in school. We dissected them in 7th grade too.
Only ever heard of them being referred to as Crawdads around here.

Uh, on the occasions that I get to go eat seafood, I always recall them as crawfish.
Around here, we call them crawfish. There's always room for crawfish.
