    Crayfish but crawfish would not sound odd to me. Mudbugs, on the other hand, do not strike me as terribly edible.

    Crayfish- it's how we were taught in school. We dissected them in 7th grade too.

    Uh, on the occasions that I get to go eat seafood, I always recall them as crawfish.
